I love to put a whole chicken in my pampered chef roaster (with a little oil and spices) and nuke it (yes microwave) for 30 minutes - turns out fabulous and not dry!

ReplyDeleteWe use chicken in Caesar pockets. All you need is lettuce (I dont eat lettuce, so I pass), pita pockets (Kangaroo are the brand near us), Caesar dressing, shredded mozzarella cheese and Parmesan cheese, and croutons, along with the chicken. You pre-cook the chicken and layer the rest, topping with croutons. Since the pockets fall over on a plate, I typically use a few croutons to hold up one side of the pocket, while I fill the other. Of course, having a toddler, I cheat mercifully and use store bought croutons, and the shake Parmesan out of a green plastic jar. Toddlers could have the chicken and croutons with the dressing as dipping sauce. It's great for a quick meal and is a very nice comfort food. You don't get much in each pocket, but the pita is a satisfyingly chewy product, so you fill up on less, if that makes any sense!

ReplyDeleteMy fave is phad thai- rice noodles with chicken, broccoli slaw, bean sprouts, maybe tofu cubes, and a spicy peanut sauce with chunky peanut butter. SO good good for you, and the kids loveit! Oh and a squeeze of lime.

After a busy day at work, I chop up two or three pre-cooked chicken breasts, throw them in a pan with half of a finely chopped up onion and two tablespoons of butter. Cook for a couple minutes to soften up the onions then add the contents of a package or two of any type of noodles or rice and sauce (I prefer Lipton Fettucini Alfredo or Cheddar Broccoli Rice) and the recommended amounts of water, milk and butter (minus 1 tbsp to partially account for the butter you cooked the onion mixture in). Add in one can of drained vegetables and cook until the rice or noodles are done, adding a tiny bit of extra water if needed while cooking, and then you have a perfect one-pan meal.

I just made a parmesean chicken for the first time. I heated up some olive oil, rolled chicken breast flat, rolled them in eggs, dipped in panko, and fried! Toss on top of spaghetti! YUM!

My favorite way to prepare chicken is cook it in the oven in one of those cooking bags with cut up onions, potatoes an carrots and seasonings. It is very little work and the chicken comes out very moist. My husband always teases me that the only thing I know how to make is "chicken in Bag."

ReplyDeleteI love making a Chicken Alloutte in puff pastry shells. Very easy..use boneless chicken breasts and put on puff pastry, spoon alloutte cheese (or cream cheese mixed with diced chives) over the breasts, roll up in the puff pastry, brush pastry with butter and bake.. easy peasy Japonesy..

I don't eat chicken (or meat) but my husband and daughter do. Cooking chicken in our house is new (read as: he doesn't cook, unless he decides he wants meat, in which case it's on him) so he's been coating chicken breasts in Penzey's turkish seasoning, wrapping them in foil and baking them. I'll be looking at your comments to see if there are some good recipes I can pass along for variety!

Best Chicken Ever: The Parmesan-Ranch Chicken Recipe!
ReplyDeleteIngredients:
2 lbs boneless chicken breasts or tenderloins
1 package dry ranch dressing
1 C parmesan cheese
1/2 C crushed corn flakes or bread crumbs
1/2 C butter, melted
Directions:
Preheat oven to 400*
In medium-sized bowl, mix together ranch dressing, parmesan cheese and corn flakes/bread crumbs.
Dip chicken in melted butter, then in the mixture from above.
Place in greased pan, bake for 40-50 minutes (or until chicken is done.)

ReplyDeleteI love to use the pre-grilled chicken with my Aloha Chicken recipe. In a skillet you make a sauce with Pineapple juice, honey, soy sauce, cornstarch, and black pepper. Once it starts to thicken you toss in the pineapple chunks and cubed chicken. I always serve it over a bed of brown rice. One of the few meals where my picky eaters ask for seconds!
