Fresh Strawberry Pie #Recipe

Years ago my husband brought me this magazine or newspaper clipping of a strawberry pie he wanted me to make so bad. Needless to say I never got around to it until now. Not that I haven't made strawberry pie before, just never made this particular recipe. He had a rough day yesterday & his birthday is Saturday (along with the fact that strawberries were on sale) so we had our first fresh strawberry pie of the season! To whomever the strawberry filling part of this recipe belongs, thank you! Yummy!

Fresh Strawberry Pie

First you need to make a crust or purchase the pre-made crust. I personally like the Pillsbury but if I'm not short on time.. my favorite is the recipe my husbands mom gave me when we got married from his Grandma.

Pie Crust: 1 Cup Flour, 3/4 Cup Shortening, 1/4 Cup Water, & Dash of Salt. Mix together well by using a dough utensil or a fork will do. Once mixed, separate and roll out onto surface. Turns out amazing every single time!When cooking for strawberry pie.. roll out to fit a 9-inch pie dish. Trim pastry to 1/2 inch and dress up the edges (flute them). Line the pastry (do not prick) with double thick foil. Bake at 450 degrees for 8 minutes. Remove foil and bake for another 7 minutes. Cool completely on a wire rack.

Strawberry Pie: In a small mixing bowl combine 1 package of cream cheese (8 oz), 2 Tablespoons of Sugar, 1 Tablespoon + 1 tsp of Milk. Mix until smooth and after the crust is completely cool, spread over the bottom of crust and arrange your strawberries (1- 1 1/2 quarts of sliced strawberries) over the top.

In a saucepan, combine 1/2 Cup of Sugar, 1 TBS of Cornstarch, Dash of Salt, 1 3/4 Cups of water until smooth. Bring to a boil and cook and stir for 2 minutes or until thickened.  Remove from the heat and mix in 1 package (3oz) of strawberry gelatin. Chill until partially set and then pour over berries. 
I added more strawberries and more gelatin because we like it really full!

Refrigerate until set and then enjoy!

  2. Mmmmmm! I was hoping you'd share the recipe after you mentioned it yesterday. This looks SO good. I am going to have to try it soon. Since it includes strawberries and cream cheese, I am pretty sure my oldest daughter will LOVE it lol.

  5. oh my!!!! this looks fabulous i made a strawberry galette a couple weeks ago and was thinking in my head that the next thing i have to try to make is a strawberry pie and this recipe sounds easy and looks good!
