Cherry Coke Cupcakes #Recipe

Say what!? Cherry Coke Cupcakes my friends and they taste as yummy as they sound. My husband loves Cherry Coke so when I came across this recipe I was all about trying it out. Several months later I finally got around too it and I'm glad I did, because they're scrumdiddlyumptious.

Cherry Coke Cupcakes Recipe. 

Makes 12 cupcakes.
Ingredients: 
For Cupcakes:
1 1/2 Cups all-purpose Flour
3 tbsp. cocoa powder
1/2 tsp. baking soda.
1/4 tsp. salt.
3/4 cup sugar
8 tbsp. butter
1 egg
1/2 cup buttermilk
3/4 cup Coke
1/4 cup maraschino cherry juice.
2 tsp. vanilla extract.
Maraschino cherries, stemless

Glaze:
1 cup powdered sugar
2 tbsp. Coke

Topping/Frosting:
2/3 cup heavy cream
4 tbsp. powdered sugar
Maraschino cherries.


Directions for cupcakes: First you are going to make your cupcakes. Preheat oven to 350 degrees F. Line your muffin pan with cupcake liners. In a medium bowl combine the flour, cocoa powder, baking soda and salt. Mix well and set aside. In your electric mixing bowling use your paddle attachment, combine the sugar and butter (butter should be room temperature). Mix on medium-high speed until light and fluffy. Mix in egg. In another bowl, combine the buttermilk, Coke, Maraschino cherry juice, and vanilla extract and mix.

Mix the dry ingredients into the butter-sugar mixture on a low speed until well incorporated. Divide the batter evenly into the cupcake liners. Add a Maraschino cherry into each cupcake (you can add more, but we preferred just one when we taste tested) until cherry is covered by batter. Bake for 18 minutes, or until toothpick inserted in center comes out clean. Cool in pan for a few minutes & then completely on a wire rack.

Glaze Directions: Combine the powdered sugar and Coke in a small bowl and whisk until smooth. On cooled cupcakes spoon a small amount on each cupcake. Allow to set, this forms a barrier between cake & frosting.

Whipped Topping/Frosting Directions: Add heavy cream to mixing bowl and use the whisk attachment. Begin whipping on a medium speed while adding the powdered sugar. Gradually increase the speed to high as peaks form. Whip until the cream has stiff peaks, do not over whip. Add to pipping bag (or baggy) and pipe on cupcakes. Add a Maraschino cherry to the top of each.

  3. These look so delicious. I tried making cupcakes with just a can of diet cherry coke and a box of cake mix one time they were quite delicious, next time I just need to reduce the baking time a bit and that would be better.
